Crock Pots and Slow Cookers

Whatever you call them, these are amazing for cooking cheaper cuts of meat, soups, casseroles, even puddings and desserts. I’d be lost without mine.

Crock pots (slow cookers) are great … we use one at least twice a week. We always make a bit more than need for a meal … the leftovers usually become my work lunch next day.

One pot meals go farther than say a steak. Crock pots are also a money savers best friend. A less expensive roast turns out great when it’s crocked. Less meat added to a starch and veggies is cheaper and healthier.

Try looking in your library for Crock pot recipe books, and recipes are easy to find on line. Just Google ’slow cooker recipes’ or ‘crock pot recipes’, and you’ll find literally thousands.

Anyone have any advice on buying a slow cooker?

Here’s a timely recipe to get you started. It’s so easy, and there’s no tedious topping up the water or steamy kitchen. I have used this recipe for years, it’s delicious. I usually have to make more than one. The first one never makes it to Christmas!

Slow Cooker Christmas Pudding

4 oz soft dark brown sugar

4 oz shredded suet

3 oz self raising flour

3oz fresh breadcrumbs (just put three slices of bread in your food processor and whizz for a few seconds)

1lb 4oz mixed dried fruit and nuts(no more than 2 oz max nuts) Supermarket ‘value’ fruit keeps costs down and works fine in this recipe.

Pinch salt

Good pinch Mixed Spice

Pinch nutmeg

Pinch cinnamon

Small lemon, orange or satsuma

2 eggs

6-8 tablespoons liquid. You can use brandy, whisky, sherry etc, or orange juice, milk or even cold black tea, or a combination of alcohol and juice or tea.

Switch slow cooker on high.

Oil or butter a 2 pint basin. Put a small square of oiled greasproof paper in the bottom of the basin too. It helps stop it sticking.

In a large bowl, put all the dry ingredients and the fruit, and mix it up well.

Grate some of the lemon rind and add, along with the juice

Beat eggs and add, along with the liquid you are using. Just add 6 tablespoons at first, add more if the mixture is very stiff.

Mix thoroughly and make a wish. Don’t add any coins or trinkets. You can always pop them in at the serving stage, but warn everyone!!

Pour mix into basin, tie foil over the top, pop into slow cooker and pour boiling water to come just over halfway up the side of the basin.

Cook on high for 8 hours, store and cook for a further 3 hours before serving

OR

Cook on high for 12 hours, cool, wrap and microwave in portions.

Delicious!!!!
