Beanie Hot Pot. Serves 3-4, depending on age and appetite!
This is a quick, cheap and filling meal, ideal for lunch. It’s made from store cupboard ingredients, so no extra shopping needed!
2 large onions, peeled and chopped.
2 tins baked beans
Four medium sized potatoes, peeled and cut into smallish chunks.
1 tin hot dogs, chop each hot dog into four or five pieces
Tomato puree
Salt and pepper
Bay leaves
Bacon scraps if you have them
In a large saucepan, heat some oil and soften the chopped onions, and add the chopped bacon scraps if you have them. Fry gently for a few minutes then add the baked beans. Refill the tins with water and add to the pan. Chuck in the potatoes, hot dogs, season to taste and add a couple of squirts of tomato puree to thicken and add flavour. Add a couple of bay leaves. Bring the whole shebang to the boil, then lower the heat and simmer gently until the spuds are cooked. Stir it now and again to prevent the beans sticking and burning. Add more water if you need to.
Check seasoning, remove bay leaves (they can stick in your throat) and serve in bowls, alongside thick slices of buttered, crusty bread.
